Splitting and Sorting

Each casing is inspected for quality defects and sorted according to the intended use before further processing.

After a first soaking procedure, the guts are untangled by hand.
The casings are repeatedly cleaned by hand (to remove the fatty membranes) in a process lasting several days.
Each individual casing is inspected for defects and sorted according to diameter.
The intestines suitable for thin strings are split into ribbons.
The split casings are tied together and ready for being twisted into strings.
